Hof's Chardonnay Reserve 2017

This clear brilliant Chardonnay has a golden hue showing yellow peach and white pear flavours, with hints of citrus spice, caramel and slight natural pine forest aroma. Together with the sensation of a flinty, chalky texture on the palate, this wine is perfectly balanced with a ripe creamy finish and fresh lingering aftertaste. Matured in specially selected French Burgundian barriques for 10 months with the oak in no way dominating.

TYPE OF SOIL
The Robertson wine region towards the Indian Ocean is blessed with a diversity of soil, which includes alluvial soils and calcium rich out crops. These calcareous lime-rich outcrops are similar to Burgundy’s Cote D’or, ideal for Chardonnay.

TRAINING SYSTEM
Four strand hedge, winter pruning, bunch dropping at veraison.

PLANT DENSITY
3470 vines per hectare.

YIELD
9 tons per hectare.

VINIFICATION AND AGEING
The Chardonnay was picked in two different stages. The first early pick captures the freshness and is higher in acidity. The lower sugar levels allow the opportunity to ferment with natural indigenous yeasts on the skins of the fruit adding to the complexity of the wine. Portraying even further the uniqueness of the Robertson terroir.

The second picking was riper, giving the wine the weight and richness, as well as showing the ripe peach flavours. All of these components were destemmed, crushed and pressed gently before fermentation took place in 300 litre selected Burgundian French Oak barrels.

Care was taken to keep the primary fruit flavours. The wine was kept on its gross lees and stirred once a month, keeping it well preserved playing a role in filling the mid-palate. After 10 months of maturation the wine was prepared for bottling.
